What is a PEX manifold and why does it matter?

It's a central distribution block with a separate line to each fixture, common in newer builds. The advantage is that any single fixture can be isolated at the manifold. The catch is that nobody labels them, so the first job on a service call is often figuring out which line goes where.

Why does a shower go cold when someone flushes a toilet?
